Haystacks




This is great for first time guests or finicky kids! Everyone chooses his own combination of tastes, yet you haven’t had to be a short-order cook to accomplish it. And use your imagination- the possibilities for toppings are pretty endless. 




4 to 6 C cooked Rice

4 to 6 C cooked Chicken (The meat from one boiled and boned bird, or a roasted chicken from the grocery store deli.)

1 to 2 C each:

chopped Green Onion, diced Bell Pepper, (red, yellow, and/or green) sliced Mushrooms, diced Tomatoes (fresh, not canned), chopped Celery, 

slivered Almonds or toasted Pine Nuts, shredded Cheddar

1 can of Pineapple pieces, drained



3 C Chicken Broth

2 Tbs. Cornstarch



2 to 3 C Crunchy Chinese Noodles



Whisk the cornstarch into the broth and heat until it has thickened to gravy, seasoning with salt and pepper to taste.  Set everything out in dishes and, starting with the rice, build your haystacks.  Top with noodles and gravy.
