Coconut Curried Red Lentils



 Comfort food from another culture.  Don't forget Naan bread, warmed in the oven.



1 yellow onion, plus optional: celery, carrots, and red bell pepper (or any veggies on hand, really)
a few cloves garlic
3 Tbls curry powder
1 can crushed tomato
2 cups red lentils
6 cups vegetable broth (or chicken, if you're not serving to Vegetarians.)
1 can coconut milk
Kosher salt
Black, brown, Jasmine, or Basmati rice....follow directions on bag

Chop and saute your veg in a little olive oil and season with salt. I use whatever of those veggies I have. I like to saute until they are starting to get some color. Add curry powder and stir and cook for a bit to bloom the spices. Add crushed tomato, lentils, broth, and coconut milk. Bring to a boil. Reduce heat and simmer until the lentils are cooked. Season well with kosher salt.

***I also cook veggies then dump everything in a crockpot and cook all day. Works great. Red lentils are cheapest at Trader Joe's. I do not like this recipe nearly as much with green lentils
