Tbsp. Olive Oil

link Chorizo Sausage, chopped

Onions, chopped
Garlic,
(to taste) chopped

handful green Olives, chopped
½
can diced Tomatoes, drained
4 cans unseasoned Black Beans
Heat
the oil in a large skillet or dutch oven; add sausage and cook slowly to infuse
the flavors of the sausage into the oil.
Add onions, garlic and olives and cook until onions have softened. Add tomatoes and cook slowly until
reduced. Add beans and simmer for 2-3
hours.
Serve
right away with rice, or refrigerate overnight and warm in the oven the next
day. The flavors only improve with time!
