This is a perfect use for summer fruits and is quick and easy to make. Don't forget the vanilla ice cream!
Crumble ingredients:
1 ½ C rolled oats
¾ C all-purpose flour
¾ C brown sugar
¾ C chopped walnuts
1 tsp ground cinnamon
¼ tsp ground nutmeg
½ tsp kosher salt
¾ C melted butter
Filling ingredients:
2/3 C granulated sugar
¼ C cornstarch
½ tsp ground cinnamon
¼ tsp ground nutmeg
8 C fresh fruit (blueberries, peeled, cored & chopped
apples, peaches, plums, nectarines, etc.)
1 tsp vanilla extract
2 Tbsp lemon juice
2 tsp lemon zest
Whipped cream or ice cream, for serving
Directions:
Preheat oven to 350°.
For the crumble: Combine the oats, flour, sugar, spices,
and salt in a medium bowl. Stir in the melted butter until all of the dry
ingredients are moistened.
For the filling: In a large bowl, add the vanilla, lemon juice, and zest to the fruit, stirring until combined. Combine the sugar, cornstarch, and spices in a small bowl. Add dry mix to the fruit, stirring until well mixed.
Add the filling to a three-quart baking dish and top
evenly with the crumble topping. Bake for 45 minutes until the edges are bubbly
and the topping is crisp and golden brown. Let rest for 10 minutes, then serve
with whipped cream or vanilla ice cream.
