Green Tomato Relish



This multiplies well, if needed, based on how many green tomatoes you have and how long you can stand to be dicing them up!


8C green tomatoes, small diced

3 Tbsp. salt

2 C cider vinegar

2 C sugar

3 Tbsp. mustard seeds

½ tsp. celery seed

1 tsp. ground turmeric

3 C. diced onions

2 large sweet red peppers, diced

1 hot red pepper, diced fine

 

Mix the salt with the tomatoes, cover, and leave to sit overnight. In the morning, drain the tomatoes with a fine mesh sieve.

In a large pot, combine the vinegar, sugar, mustard seeds, celery seeds, and turmeric. Bring to a boil, lower heat and allow to simmer for 5 minutes. Stir in the drained tomatoes, onions and peppers. Return to a boil, lower heat and gently simmer for 25 to 30 minutes, stirring occasionally. Pack into hot sterilized jars and seal. Process in a hot water-bath canner for 10 minutes.
